Foolish Feast #9 – an Apple a day keeps the doctor away

The Foolish Couple 0
It’s an old saying. An apple a day keeps the doctor away. Probably true in the golden days, but today’s apples are far lacking in nutrition value then its predecessors.

Apples like to be in the news. Not too long ago there were debates and investigations into the level of arsenic in apples. Lately, scientists developed an apple that would not turn brown.

Yes. Unreal. like cheese that would not turn moldy. A piece of cheese that even a mouse won’t eat is probably not real cheese. An apple that does not oxidize (turn brown) is not something we would personally recommend.

Some apples can be harmful … Remember the apple that snow white ate? (j/k)

But, as we are into apple harvesting season, we chose Apples to be our main star this time. Apples are considered a highly ‘dirty’ fruit. So be sure to buy organic, or, at least, peel the apple before consuming.

At the beginning of this year, we set our ‘relationship fun goal’ to cook 12 meals this year, using the 1-2-3 formula:
1 main ingredient
2 chefs (amateurs, by far)
3 courses

With apples as our main ingredient, we stay away from being too predictable. Instead of the commonly loved Apple Pie, we decided on a savory version: Apple and turkey pie. Here’s the 3 courses today:

1. Butternut squash and apple soup. Super simple, just cook bacon, squash, apples, onions, celery, carrots and potatoes in chicken stock until soft. Blend and serve with a dollop of greek yogurt.

2. Apples, mango, and lobster salad – chopped apples, mangoes, cooked lobster, cilantro, with a simple dressing made of olive oil, apple cider vinegar, garlic, shallots, salt and pepper. It is delicious, refreshing, and healthy.

3. Apple and turkey pie – for simplicity sake, we used store-bought, non-GMO pie dough, with apples, ground turkey and a bunch of spices. This is a delicious and healthier alternative to the normally sugar-loaded apple pie.

Serve with warm, mulled apple cider. Enjoy!
